Pineapple Coconut Iced Tea (No-Added-Sugar, Healthy, Lower-Carb)

Serves: one large glass or two medium-sized glasses


Sugar-Free 'Pina Colada' Simple Syrup:

  • 1 cup monk fruit sweetener
  • 1 cup of water
  • 1/2 cup of fresh pineapple chunks
  • 2 1/2 ounces of unsweetened coconut

How To Make

In a medium saucepan over medium-high heat, add the pineapple chunks, coconut, sweetener, and water. Bring to a boil and stir continuously until the monk fruit is completely dissolved. Take off the stove and with a potato masher, smash the pineapple and coconut. Cover and steep for 30 minutes. Smash the mixture one more time. Then, with a fine-mesh strainer lined with cheesecloth, press the syrup through and into a glass container.

For the pineapple coconut iced tea: drop the Coconut Warrior tea bags into the bottom of a pitcher. Pour boiling water over tea bags, until they are just covered. Steep for 10 to 20 minutes. Remove the tea bags and pour the cold water into the pitcher. Add the pina colada simple syrup and stir well. Serve over ice.

Note: For the best results, make the syrup a day in advance and skim the fat off the top.
